But without it, how would the Count make his famous "Bloody" Marys. . . . And some blood, like that of a virgin, offers a special, untainted sweetness, that needs to be savored. . .like a fine wine. .. . . . .*cough* *cough*. . .or so I've been told.

what's wrong with "i vant to suck your blood"? its just annoying, its like saying "left foot, right foot, left foot right foot", its an inner thought, for walking you dont conciously think of it, just like vampires probably dont think of sucking blood as a forced thing, they just do, why would they announce it?

Maybe announcing it is involuntary as well, just as stating the obvious is involuntary ("Whoa! you got shot, fell down a well, and mysteriously burst into flames? That must've hurt!")

and maybe he just wanted the others to know his intent, it was the very first vampire movie so not everyone knew what a vampire was at that time

Or maybe, they just wanted a catch-phrase, that people would remember. . . .which they obviously have

so not everyone knew what a vampire was at that time that might be in part because they invented the vampire (as a character). I'm sure ancient vampires (as seen in legends) are much different from the ones seen in movies

That's true. . .just like the defense against them were invented, too. . . a crucifix, a mirror, etc.
An ancient way to have protected yourself against a vampire, was to have a tattoo. It seems the ink/dye used in old tattoos contained a small amount of lead.
That lead would get into you bloodstream. Your blood would became tainted and no longer palatable to vampires. . .

As for protection against them, garlic is always good; however, I think you are supposed to use the flowers instead of the bulbs.

I believe Bram Stoker invented the modern vampire. . based on ancient stories of creatures who roamed the night searching for human blood.
I remember seeing a movie, where it was revealed that Dracula's true identity was Judas. . .condemned for his crime against Christ. That's why so much of the legend involves the crucifix. . .the wooden stake driven through a vampire's heart, also represents the wood of the cross.
The region of Transylvania, told stories of vampires, even before Vlad the Impaler, brought evil-incarnate to that region.
